Der Ausdruck Herrenschokolade für Bitterschokolade ist ein Marketingbegriff. Schokolade wird seit dem 19. Jahrhundert vor allem als Produkt für Kinder und Frauen wahrgenommen, weshalb heute die herbere dunkle Variante auch als Herrenschokolade vermarktet wird.[5]
Bis zum 19. Jahrhundert war Schokolade ein Genussmittel für Erwachsene beiden Geschlechts, nicht für Kinder. Bis dahin galt sie als nahrhaft und kräftigend, teilweise auch als Aphrodisiakum. Der Imagewandel der Schokolade zu einer Süßware vor allem für Frauen und Kinder führte zu einer Vermarktungsoffensive der Hersteller. Der Begriff Herrenschokolade wurde Ende des 19. Jahrhunderts eingeführt, vermutlich zuerst von Stollwerck. Bereits in den 1870er Jahren produzierte die Firma Suchard in der Schweiz jedoch ein Kakaopulver als Trinkschokolade für die Armee unter der Bezeichnung „Militärchocolade“. Einige Studien kommen zu dem Ergebnis, dass der Verzehr von Bitterschokolade auf Grund ihres hohen Gehalts von Flavonoiden wie Epicatechin das Herzkreislaufsystem schützt.[1] Darüber hinaus senkt der Konsum von dunkler Schokolade den Blutdruck.[2]
Bitterschokolade besteht zu mindestens 50 % aus Kakaomasse, und muss nach dem Lebensmittelrecht mindestens 18 Prozent Kakaobutter und mindestens 14 Prozent fettfreie Kakaotrockenmasse enthalten. Der Kakaogehalt bezieht sich auf die Addition von Kakaobutter- und Kakaotrockenmassen-Anteilen und es gibt daher auch Produkte aus reiner Kakaomasse als Bitterschokolade auf dem Markt.[3] Die in Belgien und Frankreich besonders beliebte Schokoladensorte hat einen leicht bitteren Geschmack und ist deutlich dunkler als andere Schokoladensorten. Es gilt: Je höher der Kakaoanteil der Bitterschokolade, desto herber und weniger süß der Geschmack.
Nach einer Untersuchung der Zeitschrift Ökotest können bestimmte Bitterschokoladen einen erhöhten Cadmiumgehalt haben, was zu einer Gesundheitsgefährdung führen kann.
Bei Untersuchungen der Uniklinik in Kiel fanden sich in allen untersuchten Proben von dunklen Schokoladen Spuren des Schimmelgiftes Ochratoxin A.
